材料 Ingredients
猪肚两个 2 Pig stomachs
500克猪骨(有肉的) 500g Pork bones (with meat)
300g 潮州咸酸菜 300g Pickled mustard green (Chiu Chow style)
10g 白胡椒粒 10g White peppercorns
4g 黑胡椒粒 4g Black peppercorns
10g 杞子10g Goji berries
猪肚出水材料 Blanching aromatics:
两片厚切姜片(拍松)2 thick slices of ginger (gently crushed)
两粒红葱头(拍松)2 shallots (gently crushed)
清洗猪肚的材料 Pig stomach preparation ingredients:
两汤匙白醋 2 TBS white vinegar
两汤匙盐(粗盐较佳) 2 TBS salt (coarse/fine)
